Sunday Dinner, July 5, 2009 & Happy Independence Day!

I'm a little late getting my Sunday Dinner post done because I've been celebrating Independence Day with family and friends, doing that most patriotic of activities: eating too much.

More on that in a bit, but first let's deal with Sunday Dinner.

I fear many may be disappointed again this week, because I'm not cooking Sunday Dinner. My church is having Patriotic Sunday which will be finalized with a sandwich fellowship after the 11 am preaching service.

I have a surplus of homegrown cucumbers that my father in law has shared with us, so I'm going to make some of my HOMEMADE REFRIGERATOR PICKLES to take for the fellowship, and I think I'm going to make some homemade lemonade to take.

The fellowship completely slipped my mind when I went to Wal*mart Thursday so I didn't get any kind of sandwich makings or enough bread either, so refrigerator pickles and lemonade it is.

As I alluded to earlier, I spent Saturday afternoon at my nephew's place, enjoying food, fun and fellowship with family and friends. Danny fried catfish and French fries outside under their carport and man, was it ever good!

I took some of my homemade refrigerator pickles to the fish fry, and others contributed various desserts and side dishes to round out the meal.

The day started out hot and sunny but as the day wore on it got really cloudy and humid and we were under a thunderstorm watch until 8 pm tonight. We got several showers but nothing severe, and not much thunder and lightning at all, praise the Lord.

It was still very hot and humid, but we made it okay under Danny's carport with some box fans moving the air around and helping keep the flies at bay, although not entirely successfully.

We left a little after 8 pm to come home. The mosquitoes were beginning to make their presence known and I for one wanted no part of feeding the skeeters.

It was a very enjoyable afternoon/evening and I enjoyed the catfish and the company immensely.There's really no news about Lamar's eye, still yet. We did get word that the blood work they did this time came back negative, but since we don't know for sure what they were testing for, we're not really any better informed than before we got those results.

Negative for what???

And of course the offices were closed Friday-Sunday for the holiday weekend, so we haven't been able to contact them for more information.

Lamar's next appointment with the eye specialist from Memphis, Dr. Meyer, is on July 17th, so we're basically in a holding pattern until then, assuming we don't hear anything from them before then.

Since we're at a standstill regarding Lamar's eye, he's going to take advantage of an opportunity to visit his brother in Fort Worth this week. Barring any unforeseen hindrances, Lamar will be leaving with his Uncle Pete in his semi truck on Sunday morning, headed for Fort Worth. He'll be there for a week, riding back on Am*trak next Monday night/Tuesday morning.

It will be good for him to get away for a while and take his mind off all the circumstances surrounding the issues with his eye, and it's been nearly a year since he's seen his brother.

I'll be well occupied with my grocery shopping on Monday or Tuesday, and then I'll have Emmy here with me Wednesday-Friday, so I'll have a full week. And that's in addition to my usual chores and things I need to get done during the week.It's nearly midnight my time, so I'm going to get this proofread and published. sorry, I can't help but laugh at the image of a bunch of y'all huddled under a carport with box fans a blowing frying catfish while the storms roll in. sounds like redneck heaven to this redneck for sure!!

The catfish sounds yummy, but I do not enjoy eating outside. I hate bugs. Shudder.

We had a great day yesterday, about which I plan to post soon - it was a very interesting and different 4th for Dwight and me.

Unfortunately, it was also Saturday, and I ended up with the girlies for awhile in the afternoon, which prevented me from getting to the grocery store for my usual trip - being a holiday and all, it didn't seem like a fun idea anyway! But I needed to get stuff for dinner today, which I did not accomplish. So who knows?? I might spring for Wendy's or something like that.

I have so much to share about yesterday that it may take two posts!

The 4th was hot here, about 80, with clear blue skies. We had some neighbors over for a BBQ, then watched the local (mostly illegal) fireworks from the neighborhoods outside our park until the big Seattle display at Lake Union came on channel 5 at 22:00 in HiDef. We watched that, then watched some more local stuff as you couldn't go to sleep until after midnight with all the noise. Kind of a quiet but pleasant one for us. I don't know what dinner will be today. That's up to the Kitchen Boss.

Well Diane, how did the homemade pickles turn out.... How many did you make?

I'm cooking shrimp creole for dinner... They had jumbo shrimp on sale at HEB this week for $ 4.99 a pound so I broke down and bought a pound.... I have a very simple, but good recipe..

I'm glad that Lamar is getting a chance to go visit his brother. The older we get the more important it is to get those visits in.... TF and I are going to Florida, in three weeks to visit his parents for three day... I haven't seen them in four or five years, so I am glad that we are both going this time.

Next week, I will be taking JJ. to College Station, TX for a one week space camp for kids 7 to 11 years old. Bonnie found out about it and thought that JJ would like it. We will be staying with her while we are up there, so that will save costs... JJ is very excited and can't wait to go.

Good luck with finding out about the "negative" results on Lamar's eyes... I know it is worrisome, not knowing what's going on... Hang in there and give Lamar a hug for me.

It sounds like a really nice day Diane.
We always have a birthday party on the 4th - our younger son's birthday. It is so unbearably hot here that we decided instead of a cook-out we would eat in a nice air conditioned restaurant. Then we all went back to his house for cake and ice cream. It was fun.
I hope Lamar has a good time with his brother. I'm sure it will do him good to just do something special like that.

I had chicken salad for my dinner today. It was right tasty too!

I'm glad Lamar will get a chance to visit his brother. That'll be nice for him.

You must have had a great time.
I stayed home on the fourth but it wasn't quiet by any means. some of the neighbors have boys and they all gathered on the street nearly in front of my house and burned up fireworks from around five till after ten. Talk about noisy! Thank goodness they only do it once a year!
I made chicken and noodles on Saturday so was planning to have it again on SUnday but Some of my kids came and they brought dinner for us. Sandwiches, fries and Strawberries and ice cream and lemonade. It was so nice to have them all here and not have to cook too. Also my SIL installed a new kitchen faucet for me and the girls helped me chop out the old willow stump so I can get the site ready for grass seed now. It was a great day!
I hope Lamar has fun with his brother.

Good for him, taking a trip while he can. I'll be glad when they finally solve this mystery and of course I'm praying his vision can be fully restored.

Your fish fry sounds so good. I can't remember the last time I had really good fried catfish but I know it wasn't in Colorado - it was in Texas. LOL

Diane, I'll continue to pray that the drs can come up with some firm answers as to what is going on with his eye. It must be maddening to not get clear answers, and youre right - a trip to divert thoughts and worries is a good thing. I've only traveled on Amtrak once but loved every minute of it.

So belated Happy Independence Day too you. Even from Norway, since I'm married to an American, I know that it means a lot to you.

You know we have the taste for good food together and fried catfish sound soooooo delicious - bet it taste good!
