Sunday Dinner, March 9, 2008

You might gather by my Sunday Dinner button this week that I'm cooking pinto beans for dinner, and you would be correct, Sherlock. I have a 5 quart Dutch oven slopping-over full of pinto beans cooking away as I type this.

I'm planning on making a big skillet (or 2, according to how many show up for dinner) of MY HOMEMADE BUTTERMILK CORNBREAD to accompany the beans. Likewise, according to what strikes my fancy, I may fix some green beans, steam some broccoli, mixed veggies or Brussels sprouts to beef up the meal. Just depends on my fancy and how many are here to vittle with us.

I'll use it next week. Providing I don't totally forget about it. But I don't think I will. Because I love the cute button you sent me. ;-) **Remember the snow pictured in the post below this one? I say remember, because that's about all that's left of it: a happy memory. There's still some snow lingering in shady spots but for the most part the snow is gone, melted away to only memories, puddles and pictures. Oh well, it was fun while it lasted....Speaking of pictures, I've been having lot of difficulty trying to upload pictures and graphics to this post tonight. It really reminds me of the old Blogger, grinding away supposedly uploading pictures and never actually getting it done, or rarely. I've had to try at least 5 times EACH to get my Sunday Dinner button and these 2 page dividers to upload.

After I get the first graphic loaded I just right click, copy and paste the rest of the page dividers instead of uploading each one individually. I have several awards to acknowledge but instead of posting them all here, I'm going to try to upload them to MY AWARDS PAGE. If you follow the link and they're not there it means I tried and Blogger wouldn't cooperate. I'll keep trying until I succeed so if they're not there the first time you look they should be as soon as possible.

Thank you to everyone who has honored me with an award lately!For all one of you who may care, our Saturday Supper tonight consisted of bagged mixed salad with canned diced tomatoes (I was too big a tightwad to pay almost $3 a lb. for sorry, tasteless, hard as a rock, artificially ripened tomatoes this week!) and homemade chicken and rice soup with Normandy style mixed veggies.

Lamar and I are trying to eat healthier these days so we can lose some weight, hopefully. We're not counting calories, fat grams or carbs, or cutting out all sugar. Nothing as drastic as that, instead we're working more on portion sizes and making healthier choices. So far so good, but we've only been doing it for about 2 weeks now.

I've been pretty successful a few times in the past at losing weight, so I know what works for me. Denial doesn't work for me at all. If I deny myself something I really want, I'm more likely to cave and completely go off my diet. I do better by limiting myself to a small serving of a temptation and then going back to my healthy choices after I satisfy that craving.

You may see a healthier trend in my Sunday Dinners, but that's another area that I'm going to allow us some leeway. I won't be as diligent about our diet for Sunday Dinners, but come Monday it will be right back to our healthy choices. I think we're more likely to stick with this healthier lifestyle choice if we're not too militant about it. I know it works better for me. We can afford to indulge ourselves every now and then if we stay on track the remainder of the time.As usual for my Saturday nights I still have to study my Sunday School lesson and tend to some other tasks in preparation for Sunday, and I have to monitor my beans so they don't burn.

except I have no plans for sunday dinner...except to sleep through so I can get back to work again tonight....yup here now was here last night.....

so enjoy your beans and don't tell me about what happens later heehee....

Sunday dinner sounds good--as always.

Sunday afternoon is my grocery shopping time because our son can come to be with Lee. So I usually pick us up Sunday dinner while I'm out. We only eat two meals a day--breakfast and "lupper". I sometimes have a fruit, cheese, or sinful sweet snack in addition. It works for us because we keep strange hours these days! Anyway--I think Sunday will be Italian from Fazoli's or Seafood from Captain Ds!

Good for you on the healthy choices plan! I agree that having some flexibility is the best way.

Good Morning Diane,
Your Sunday Dinner Menu sounds so good. I didn't cook anything last night and ended up ordering in. We didn't get to move as planned, but if the weather co-operates, we will be moving this coming next weekend. My DH called the Landlord yesterday and told him and he said that would be fine. The Snowplows cleared the main highways, but the side streets still had some snow on then yesterday and we didn't want to take any chances at slipping and sliding and furniture and appliances falling off the trailer. Me and the girls have enough leftover's for our Sunday dinner today. I don't know what we will have for our supper tonight tho. It's too early to think about that now. LOL. I know I need to start eating healthier, but it's so hard when your by yourself and don't have anyone helping you along. The girls don't need to cut down as they are still growing. I could fix more vegetables tho. By the way, what is Normandy style mixed vegetables? Is that a brand of mixed vegetables? I've never heard of that before. I don't like frozen tomatoes either. I like vine ripened tomatoes. I usually wait till summer when they bring them in the stores and have them then. Our girls don't like tomatoes, so if I use any in the Winter, I buy canned tomatoes. I posted some pictures on my post today of the Snow we got. When I went to click on them, they won't enlarge like everyone else's do. Am I doing something wrong or have my settings wrong? I would appreciate your help in letting me know if you can. "CONGRATULATION'S" on your very well deserved Awards. The Snow did melt quickly. The girls tried making a Snowman again, but wasn't that successful in it. I guess it wasn't the right type of Snow for it. Either that, they just didn't want to. LOL. I haven't been out driving around to see if anyone else made Snowmen or not. When my DH left this morning around 5:00a.m., there is still a bit of Snow left, but it will all melt away today I'm sure as the temperatures are suppose to be around 50 degrees and then in tht 60's by mid-week. I'm about ready to get off this rollercoaster ride. LOL. I don't do rollercoaster's at all. LOL. Take care my friend and have a great day. May God Bless You and Yours.

Sunday dinner here is no different than the rest of the week - hodge-podge. It all depends on who's working whether or not I'll cook a real dinner. I do have some crab cakes in the freezer that Dom has been asking about, so I might do those tonight.

I'm doing WW to lose weight. So by counting points, I limit my portions. I don't deny myself a small helping of something I really want - but I have to have enough points to fit it in the day's allotment. I try to eat healthier foods - not as much fried stuff. So far, I've lost 15 pounds since November - averaging about a pound a week. I still have another 20+ to go.

Can't wait for winter to be over!

Hi Dianne.
I have easy meals on weekend I cook a hot meal every other day. tonight my Daughter cooked me a lovely egg omelet, with chopped bacon, tomotoe, cheese, onion, garlic added Yummy.
Gorgeous pics of Emmy and all in the Snow specially love the one with proud granny holding Emmy....warm hugs for Emmy.. Jen

I threw some chicken wings and drumsticks in the crockpot with some cream o mushroom soup, made a pot of rice and called it supper...it was right tasty too!

I hear you on the healthier eating front, we are doing the same here. My new cookbook is helping me to remember what I should be doing!

Hi Diane,

Loved the pictures of you and Emmy in the snow, especially the one of her sticking her tiny tongue out. She's the cutest! :-)

We went over to my sister's place for dinner for our monthly pasta night. The food was delicious, cooked by my brother-in-law. Pasta with vegetable sauce with turkey meatballs, garlic bread, and a tomato salad. Yum!

Good for you on the healthier eating choices. I always feel much better physically when I'm more mindful of what I eat. I think that's the way to go! Good luck to you, my friend! :-)

Beans and cornbread sounds really good. The way I like to these is to have a little soup and a lot of beans, cut up onion, dill pickles and corn bread all crumbled up in a bowl. Uhm, good, good.

We had soup tonight and cornbread.

Hi Diane, we did lasagne, salad and garlic bread today. Yummy. I love a good ol' pot of beans. Being raised in a family of 7 kiddos (5 of them growing boys) we had a pot of beans and cornbread once a week. One thing I didn't get sick of! Now, oatmeal--was another story! Yuk! Have a wonderful week!

Well, geez, I wish our snow would melt as fast as yours!!! lol We've had ours for 4 months now and still have tons of it...NOT FAIR! hehe I loved seeing the pictures of Emmy enjoying her first snow:-)

Sunday dinner for me was eaten at Montana's with my friend June...we both had the Yankee Pot Roast with Yorkshire Pudding and we then shared a brownie dessert which I posted on my blog this morning:-)

Like you, I can never go on a strict diet because I'd never last. Cutting down portions and not eating in the evenings is what usually works for me. Good luck to you and Lamar:-)

I had a heck of a time loading pictures this morning for my post...as you said, reminds me of the old Blogger! Ugh! I found it worked better if I just loaded one picture at a time but even then sometimes I had to try it a few times.

As you can see, I'm trying to catch up here. I had company again over the weekend. A friend's father died and he came in from out of town and stayed with us. I told Dave I was starting to feel like a "halfway" house for funerals! :o)

Looks like I missed a good soup bean dinner yesterday too! I can eat the beans but not the cornbread. I'm watching every bite that goes into my mouth right now to try and get this blood sugar under control. The pills aren't bringing it down much so I have to go back to the doc and see what he can do.

As far as I am concerned (unless you have diabetes) eating what you want in smaller portions is the way to go. Any time I tried to deprive myself of something I would wind up bingeing on other stuff, trying to fullfil that craving. Not good!! Sounds like you are getting it under control!!

I can't believe all that snow you got, Diane. The photos of the baby in her little pink coat are adorable.

Good for you, re the healthy eating. It's been a while since I had to consciously diet, but when I needed to lose some pounds, that's what I did. I didn't really change what I ate but I changed the amounts I ate. I did cut out bread. That was the hardest part. Ever eat a sandwich without bread? LOL

We were at our kids for dinner this sunday - delicious chili. I love anything I don't have to cook myself!
Your diet plan sounds very wise and sensible to me. I think you'll have great success with it. And getting healthier is a really good thing! I wish you absolutley the best on it.

Your eating plan sounds realistic and like one that can work. I'm off on a healthy eating plan too. Sounds a lot like yours, with this exception: I found that if I can eat 4 or 5 small "meals" throughout the day and then eat my healthy dinner, it jump starts my metabolism so that things burn more efficiently. (my main problem). I also believe in allowing oneself a small portion of something that's gonna literally drive you nuts if you don't have any.
I'm cutting back on fats and carbs and eating more fruit and protein. A piece of chicken (not fried) is always good, and you can chop it up into a salad or just eat it with some fruit. That's the kind of thing I'm having for my small meals - or just a piece of fruit, or some yogurt with a bit of crunchy granola on it. Stuff like that. I'm drinking a good half-gallon of water each day. I think I'm doing pretty well.

Hummmmmm....Pinto Beans cooked in a dutch oven, nothing better. I went over to check out your cornbread recipe and it sounds wonderful.. My dad liked cooking with buttermilk and it does add a special flavor to cornbread.

We just had a boxed mix of red beans and rice with some sausage mixed in for dinner tonight. I've been babysitting my two grandkids for the last four days and that is all I found time to cook....I really don't know how you handle Emily so much. This was alot easier when I was younger and raising my own kids.....

Good luck on the weight loss campaign -- I think it's a good cause. My husband just had a big scare with his glucose count and triglyceride count and it put the fear of God in him. He has completely changed the way he eats, has been exercising faithfully, and has lost 20 pounds! I'm so proud of him.

I am two days late for Sunday dinner - we didn't have any! Well, I didn't. I was so miserable. It's Tuesday afternoon and I'm feeling better after spending today in bed, and having a really good rest last night.

I have been eating a lot of popsicles. This flu I had was really wicked. Can't wait till I get healthier and I am going to try to lose some weight also.

I am sure late for the sunday dinner comment.
However I made chicken vegetable soup. When it;s rainy, windy or snowy, I always like soup or stew. However today the sun was out and I did some yard work. I had a good appetite tonight and made a little beef steak and a pan of roasted veggies. Rutabaga, carrot, onion, and broccoli. It was SOOOOOO good!
I'm trying to eat healthier too. God help us all.

The pinto beans look good. On Sunday we had slow cooker steaks and vegetables for dinner and it was mighty tasty. I have been using the slow cooker more since I was down with that flu. I just haven't had the energy to cook a big meal.

We still have 3 foot snowbanks here. Bigger in some areas and it is very dangerous when driving because you can't see past them. We have to edge the nose of the car out into the street to see if anything is coming. I will be glad when some of it melts.

Love beans and cornbread. I may just have to try your recipe the next time I make them.

The last batch of beans I just made have ended up as mashed on a flat chip with taco meat and seasoned avocados and sour cream and tomatoes...

We have both been fighting colds for the last couple of weeks so have been eating a lot of fairly simple meals at home rather than our usual going out for about half of them. Pat is a good cook and I enjoy this plus we find it is a LOT cheaper!
