HOMEMADE COCONUT CREAM PIE RECIPE

Did you know that today, January 23rd, is National Pie Day? Neither did I until my blog buddy, TAMMY @ PINK MAGNOLIA invited me to participate in her pie recipe roundup.

I decided to post one of my recipes for homemade coconut pie. I have several recipes, but I think this one is my favorite. This is great with a big cup of hot, black coffee.

Without further ado, here's my pie recipe:

HOMEMADE COCONUT PIE

2/3 cup sugar
¼ teaspoon salt
¼ cup cornstarch
½ cup heavy whipping cream
2½ cups milk
3 large egg yolks
1½ cups shredded coconut
2 teaspoons good vanilla
2 tablespoons butter
1 single crust 9-inch baked pie crust

¾ cup heavy whipping cream
3 tablespoons sugar
½ teaspoon good vanilla
½ cup shredded coconut, toasted

For filling:

Combine sugar, salt and cornstarch in a large saucepan, nonstick preferred. Gradually whisk in ½ cup of heavy whipping cream and milk until smooth. Bring to a boil over medium heat, stirring gently; boil 1 minute. Remove from heat.

Beat eggs lightly in a small bowl. Gradually whisk in 1 cup of hot milk mixture, then add egg mixture to hot milk mixture in saucepan. Return to heat, whisking constantly, and bring back to a boil. Boil and whisk for 1 minute.

Remove from heat and stir in 1½ cups shredded coconut, butter and vanilla to blend. Immediately pour into baked pie shell and cool on a wire rack for 15 minutes. Cover with plastic wrap and chill in refrigerator for at least 3 hours.

Prepare whipped cream topping:

Just before serving, combine ¾ cup heavy whipping cream, 3 tablespoons sugar and ½ teaspoon vanilla in a mixing bowl. Whip until stiff peaks form, then spread over pie filling. Sprinkle with toasted coconut.

This may sound complicated but it's really not. It's very rich and so worth the time and trouble.

We love pie! It's a rare treat, though. We try to watch our weight, and since my husband's heart bypass surgery, we try to eat a heart-healthy diet. It sure is hard to do sometimes; both of us love to eat, and I love to bake.

Pie is my favorite dessert of all time! Such a treat and I have to say that we have them OFTEN...especially since I discovered Pillsbury Pie Curst rolls at the groc. store! lol
Your Coconut sounds fabulous. All that cream...YUMMY. I, too, posted a Coconut Creme recipe...a very old recipe...It is only 6:30 in the morning here and I am already having a Coconut Pie attack!

Good Morning Diane,
Oh my gosh, I just left BJ's and she had a Coconut Cream Pie and now I come see you and you have a Coconut Pie, oh my, what am I going to do? LOL. Well, since you live the closest, I may just have to come and see you and get a taste of it. LOL. Coconut Pie's are one of my favorites. I could eat a whole one by myself. LOL. I'm no baker as you know, but I did post my version of Chicken Pot Pie. I haven't made it in several years tho. It is another cold morning here. They say it's suppose to get colder again tonight and maybe another chance of freezing rain on Friday. I doubt we will get anything tho, maybe another cold rain. "HAPPY NATIONAL PIE DAY". I never liked coconut cream pie till a little country neighbor in Ky offered me a slice with a cup of coffee...I did not want to hurt the sweet lady's feelings so I ate it...boy was it ever good!

I had no idea about National Pie Day. It's also my Dad's 88th birthday, and I think he will be happy to have this little bit of information. We do love our pies!
