Sunday Dinner, February 28, 2010

I know I say this occasionally, but this time I really meant it: this post is going to be brief because I'm totally wiped out and I still have to actually cook Sunday Dinner after I post this blog entry.

I stayed up way too late Friday night/Saturday morning watching the live coverage of the devastating 8.8 Chilean earthquake and resulting tsunamis and I'm TARD tonight.

I'm very thankful that all my friends that were in the path of the tsunamis are safe tonight and my prayers go out to those affected by the quakes and the tsunamis.

I also attended my great-nephew's 3rd birthday party this afternoon which has thrown me off schedule for doing my cooking and given me a later start than usual for my Sunday Dinner preparations.

Not that I have a schedule or anything as fancy as that. Who am I trying to kid?

Anyhow, in light of the late start for my cooking, I'm making one of my simple, easy, but delicious old standbys for Sunday Dinner, namely, HAMBURGER SOUP. The ground beef is thawing as I type this and I'll brown it in a big stock pot and add some frozen veggies, some peeled and cubed potatoes, chopped onion and some canned tomatoes.

I'll also add some of my precious freezer stock of sliced okra that I put up last Summer for just such an occasion. Some beef bouillon granules and some salt and pepper will finish off my soup, and I'll make an iron skillet (or 2, depending on how many will be dining at Chez Diane's for Sunday Dinner) of MY HOMEMADE BUTTERMILK CORNBREAD to round out the meal.

Simple but delicious, nutritious and filling: hamburger soup and hot buttermilk cornbread. Works for me.

Ducky is still slowly improving and went back to work this past Wednesday, but she still tires easily and is on a reduced schedule by necessity. She's having trouble taking antibiotics and has had to change her medications 3 different times now because the antibiotics are making her nauseous.

She still has some sinus and lung problems and the pneumonia is much better, but she's really having problems getting well because they haven't been able to find an antibiotic that she can tolerate. Hopefully this third med will be the charm and she'll be able to tolerate it and get better quickly now.Continuing the saga of Lamar's eye woes, he's been given the option to have surgery on his damaged left eye again in hopes that it may help improve his vision. As the eye surgeon said, at this point there's not much harm that could be done since Lamar has so little sight left in the eye, and the surgery may possibly help.

The surgeon intends to scrape the cornea on his left eye to remove a cataract caused by scarring to the eye from the original stroke, and also inject some medications directly into the eye at the same time.

Nothing ventured, nothing gained, and at this juncture any hope for an improvement in Lamar's vision is worth pursuing. If there's still no improvement, at least we can say we tried.

Lamar's eye surgery is scheduled for Tuesday afternoon at a Memphis, Tennessee hospital, and he has to go back to the eye surgeon's office on Wednesday afternoon to have the eye unpatched and examined.

We'd appreciate your prayers for both Ducky and Lamar, dear family and friends.And now I'm going to get that hamburger soup made, put it in the fridge and head for bed soon thereafter.

Praying for Lamar and for Ducky. I am so sorry they are both still having problems. Many prayers going up from this gal for them!!

Your dinner sounds delicious. I know what you mean about schedules and all that. My sister and I were discussing that now that we're older, we like to keep our own schedule and anything that takes us off that, makes us really tired and takes us a while to get back to normal. Old age is SO fun. lol

I think I'm going to cook a turkey breast tomorrow (if that darn thing is thawed finally by morning!!) with baked potatoes and veggies. Simple but yummy. If that turkey isn't done, I have no idea, but I'll cross that bridge when I come to it. :)

I'll be praying for them too Diane. My husband has had so many eye surgeries and so many problems - I know what you're going through. I am praying that they will be able to restore his vision.

I always have this ridiculous idea that I can actually have a schedule, but it always gets derailed by some crisis in Kristen's life. It is wearying! I have had the girlies for many many hours this week as she's struggled with reoccurring flu junk. I don't know how much more her little body can take - or how much this grandma can!

So - no plans for lunch today. We'll see - DC's been sick all day yesterday, too. Yucky week.

I had to laugh about you saying how your schedule was thrown off track. It seems like some of the best-made plans are the ones that get switched the most often. Anyway, I'm glad Ducky is getting better. I have a short list of antibiotics that I can take, too. The Lord would certainly have to intervene for me if I got a serious infection. Of course, we know that He's the One in charge, anyway. I'll certainly remember to pray for Lamar and YOU on Tuesday. Let us know how things go.


I think that your soup and cornbread sounds delicious. Too bad your blog isn't "Scratch and sniff" today :)

Diane, my Mom cannot tolerate most antibiotics so I can certainly appreciate your sister's position. I hope they find a med soon that works and doesn't make her sick. Nausea is just the worst...she remains in my prayers.

I hope Lamar's upcoming surgery improves his vision. This has been such a long, frustrating journey, I know. I will be praying for a successful outcome!

Not sure what is on my dinner menu for this evening. Perhaps I'll go out for pizza with my friend Kimberly...if not, I'll just pull something from the freezer or have a cup of tea and call it good!

Haven't been doing much blog reading since I discovered FB and FV the end of Deceember. I am blaming this new FV addiction on a friend. Will be praying this week for your sister and for Lamar. Take care of yourself, too. I know it has been a stressful time for you. My son went through a divorce 5 years ago and we are still healing. Love from Idaho..vt

Guess what I made for dinner? Yep, Hamburger Soup! Great minds think alike! LOL I didn't make cornbread though but wish I could have. I was having a lot of back pain earlier today and just couldn't stand at the counter any longer.
I pray our Heavenly Father will continue to heal your sister and the medication will not make her sick. Also for Lamar's eye sight to be normal.

Hi Diane, it's late, long past Sunday Dinner. I didn't cook today, took a day off as I was very tired too. So, kicked back and watched the boob tube.

Hope that all goes well for your hubby and sis. Will keep both in my prayers.

Hamburger soup sounds wonderful... I made lazagna and salad, Bonnie was over and requested lazagna, so "mom" made it..lol. We went to a baby shower for my niece Sunday morning and I was surprised I actually made more than Breakfast for dinner.

I keeping Ducky and Lamar in my prayers, praying for quick recovery for the both of them... Let's hope this surgery for Lamar will be just the right thing... Hang in there, Diane.

Diane, will be thinking of you tomorrow with Lamar's surgery. It sounds scary but the surgery is not as bad as it sounds. I hope this helps improve his vision. All I can say is, been there done that, twice! Will check to see how you guys make out...hugs, Donna

My Grandma used to make hamburger soup - I hadn't thought about it in a long time. Now of course I'm craving it!

I wish you could email me some of that delicious sounding soup! lol You always have me drooling when you mention what you're cooking. I had Chili from Tim Horton's on Sunday for dinner, picked it up on my way home from the auction:-)

As I mentioned to you on Facebook, my prayers are with Lamar and I'm glad he decided to go ahead with the surgery for his eye. As you said, there's a chance it can improve his eyesight and if not, then at least he tried. My mom is still amazed at how well she can see since her cataract surgery:-)

Poor Ducky, my mom has a hard time with antibiotics as well and she reacts to so many meds, it's quite the work for doctors to find what she won't react to!! I do hope and pray that Ducky gets better real soon. xoxo

Missed you hon...been busier than a cranberry merchant. Glad Lamar is feeling better. Praise God. I was praying for him, and continue to do so for his full recovery.
