Sunday Dinner, February 14, 2010

I be TARD tonight, but I'm going to get this posted before I head for bed, Lord willing. Of course it may turn out to be one of those "the spirit is willing but the body is weak" things, but we'll hope for the best, shall we?

Once again this week, I'm not cooking Sunday Dinner. Several things factor into this, not the least being that my sister Ducky is in the hospital with pneumonia and, I suspect, pancreatitis. The pneumonia has been confirmed but the pancreatitis hasn't, though I suspect it will be soon.

Since Ducky's in the hospital, more than likely as soon as church is over at noon I'll go eat somewhere with my sister Cecil (Lisa) and then we'll go to the hospital to visit with Ducky until church time Sunday evening.

Also, we have a good chance of snow showers for Sunday. Now the weather geeks are saying we won't have any accumulation, but you and I both know what that means: not a thing. So there's a possibility that the roads may be bad and I won't be going anywhere, and nobody will be coming here.

And another thing, we had our Valentine's banquet at church tonight (Saturday) and I didn't get home until after 9 pm. I'm not about to start cooking at that time of night, so taking that and all the other factors into account, I decided that the best course of action was to just let it ride and deal with Sunday Dinner as it all unfolds.

No doubt many of you will be eating out with your Valentines, so please share your plans in the comments if you'd like.Although I didn't cook Sunday Dinner this week, I have been cooking some new recipes lately. Not that my old standards aren't good, but we all need to shake things up occasionally and try some new dishes every once in a while to keep things interesting.

I made some homemade enchiladas the other night that were really good. I'll definitely be making those again. I combined several different recipes and then kind of did my own thing with them, so I don't have a recipe, so I hope I can remember how I made them so I can duplicate them next time I want to make them.

And Wednesday night I made some green split pea soup cooked with a ham bone I've been saving in the freezer. I used a new recipe for that too, and was really pleased with how it turned out. Lamar wasn't overly impressed with it though. I don't think it was hearty and manly enough for him. ;o)

Friday night I made some homemade eggrolls for the first time ever. They turned out great and I even had enough to freeze some for later. Emmy ate 2 of them! And Lamar pronounced them "really good", high praise indeed.I mentioned in my last post that we were supposed to get more snow on Monday, and that Lamar was coming home on Amtrak in the wee hours of Tuesday morning. Well, the snow did indeed fall and Lamar also arrived, so Jessica borrowed her Papaw's 4 wheel drive pickup and retrieved Lamar from the train station.

We got over 6 inches of new snow, although there was also rain falling with it at times, so that kept the total accumulation down. The temp hovered just below freezing all day Monday, so most of the snow accumulated on houses, yards and fields, and not so much on the roads, hallelujah!

This latest snow was light and fluffy and made excellent snow cream, and was more a nuisance for most people than a real hazard. We still have snow lingering from our 12-inch snow 2 weeks ago, and now more from Monday's snow, but it's slowly melting away as our temps have been above freezing for the last several days.

I have a feeling we still haven't seen the last of snow this Winter, and I'm sure we'll still have more cold weather. It just doesn't feel like Spring is imminent just yet. Time will tell, I suppose.Time to get this posted and get myself in the bed. I wish you all a very Happy Valentine's day. And if you're a praying person, I would appreciate very much your prayers for my sister Ducky (Martha). Thank you in advance, because I know I can depend on your prayers for her.

You're quite the cook there, Diane! I have never even seen an enchilada, let alone make one or taste one! LOL

TV said we got 6 inches snow Friday night. Most melted off by noon Saturday, though, so the roads were dry where the sun hit. Still a little in the shady areas yet. My daughter was driving the interstates to get home from work Friday night, and she kept calling me with updates...cars off the road, some abandoned in the median, 3 men trying to push a car up an incline, cars passing her and spinning their tires, etc. She called me when she got in her subdivision, and we talked til she got in her driveway. She got out to get her mail and said she was actually shaking! Thank God, she got home safe and sound! Here, they just don't have enough equipment to clear the roads like they do in other areas. It was a beautiful sight, but I'm glad it's gone now!

I hope your sister recovers well. Pancreatitis can be very painful I'm told! I have never had it but know a few who have.

I don't do Valentines Day because, like all the other stuff, it's just too commercial. When I was a young teen (a long time ago!!)a Valentine card was sent to you from someone who admired you and it was never signed!! That's all there was but now people are expected to by cards and gifts for the whole family and I can't do that.

I know I seem like an old grouch and I'm really not but all the commercialism is just too much!! :)

I am SO tired of snow! We got nailed up here this week and they're saying more tomorrow. I'm ready for spring!

I'll be keeping Ducky in my prayers. I know how precious our sisters are to us. I would be lost without mine.

We still have snow hanging around from 2 weeks ago also. I have about 4 - 5 feet dumped on my back porch where it fell off the roof. We can't even open the back door it is piled so high! It might be June before all it melts away! Neil says it is waiting for more snow to come! Yuck!

We are having homemade chicken noodle soup and cracklin' cornbread for supper tonight. I fixed some fish sticks and fries for a quick lunch.

Hope you have great week and we don't get that snow either!

Ducky has my prayers for a quick and full recovery.

I will be taking Pat out for dinner but we haven't decided where. She eats so little that buffets are not worth the price, especially on holiday rates. We'll talk it over- right now she & her daughter are out for breakfast and Walmart shopping.

The El Nino conditions have really hit the east hard while we in the northwest have been warmer than usual, although we too have had rain. Our flowering trees are flowering, the daffodils and tulips are about to burst out and I am already having to mow the lawn. But I'll take it over the winter we had last year.

On the days when I don't fix dinner for the gang, we like to just grab something quick after church and relax the rest of the day. Tonight we're going to a fabulous sounding concert at Denver First Church of the Nazarene - wish I was singing in the 500-voice choir!

I'm afraid I don't have an exciting Sunday dinner to tell about. I made a peanut butter and honey sandwich. LOL

We still aren't getting snow and I am not complaining!!. I did a little more work outside today. My daffodil's and lots of other flowers are coming up and some flowers are blooming too.

Why is it every time I come visit you I get hungry??? hehe Valentine's Day was just an ordinary day for me, I went to the auction and then spent the rest of the day organizing thousands of pictures...you should have seen my bedroom, pictures everywhere! I'm still not finished but at least got lots done. For dinner I went to Subway to get myself a Steak & Cheese sandwich on a toasted herb & cheese bun..my favourite:-)

Oh dear, I do hope that Ducky gets well soon and doesn't have to spend much more time in the hospital!! Please know my prayers are with her.

Hopefully you didn't get any more snow, it's amazing how much you already had already. Lots of sunshine here but very cold.

Sounds like you've been busy! I like trying new recipes, too. It's good to mix things up. I remember my aunt making homemade egg rolls and they were SO good!! I'm going to have to give that a try one of these days.

I don't see an update on Ducky since you posted this Diane - praying that she's better. Pneumonia is so awful and so hard to get over, poor thing.

Homemade eggrolls! Now that's something I've yet to try but I should because we all love eggrolls and let's face it - Totino's don't cut it.

It's amazing all the snow you've gotten this winter. I know you hate to be hot (so do I) but I tell you, this winter can't end fast enough for me.

Let us know how your sis is doing and I hope you're having a nice week. The spring cleaning bug hit me and boy, it's not as easy as it used to be! LOL
