Sunday Dinner, February 3, 2008 & Emmy Pics

Sunday Dinner is upon us once more, y'all.

As I type this I have various parts of a chicken simmering on the stove. When it cooks and cools sufficiently, I'll skin and bone it, and tear the meat into bite size portions.

I'll use some of the broth to make a white sauce and add canned veggies to make a big chicken pot pie for Sunday Dinner. I'll refrigerate the filling overnight, then make a quick crust with an egg, milk and flour. I'll pour the batter over the filling and bake until it's hot and bubbly and the crust is golden brown.

So, if you haven't already guessed, HOMEMADE CHICKEN POT PIE is on the menu here at Diane's Place for our Sunday Dinner. I could have sworn I'd already posted my recipe on my recipe blog, but a search came up empty. There's a picture on the left that I posted when I made chicken pot pie a while back.

I don't actually use a recipe anyway. Sometimes I use cream of chicken soup for the filling, and sometimes I make a white sauce from the broth like I will tonight. Sometimes I use frozen veggies or leftover veggies. I never make it exactly the same way twice.

A little news to share: Jessica has a new job and will be working from 3 or 4 to 9 pm Mondays, Tuesdays, Thursdays and Fridays, and from 9 am to 4 pm on Saturdays. She may get more hours later but that's her schedule for the moment. Jason gets off work usually at 5:30 most days.

Starting Monday I'll be keeping Emmy for Jessica again. Jessica will drop Emmy off in the afternoons and Jason will pick Emmy up when he gets off work. I'll have Emmy for several hours every day, but nothing like the full days I was keeping her before. That was just a little bit too much for this Grandma.

I think this will benefit all parties. I'll be able to get my Emmy fix almost every day without it being too tiring, and at the same time I'll be helping Jessica and Jason out. If you've never priced daycare fees for evening hours, you'd be shocked at how much they charge! And that's when you can find one that even offers evening hours. And I don't know of any daycares around here that offer Saturday hours.

Later on if it gets to be too much for me, Jessica may look for another option for child care, but for the foreseeable future Grandma will be keeping Emmy in the late afternoons and on Saturdays.Emmy is growing and learning right before our very eyes. She learns new things every day. And she's already saying "Mama", "Da Da", "Bye Bye", and "Baby". Not always on cue, you understand, but occasionally. She's clapping her hands in time, and almost, just almost, standing alone.

She's crawling like lightning and pulling up just as fast, and every once in a while she'll let go of whatever she's holding onto and stand unsupported for just an instant. And invariably seconds later she falls on her bottom. But the times she stands alone are getting longer in duration. It won't be long before she's walking and then running.

Emmy will be 9 months old on February 8th. Hard for this Grandma to believe, but it's true. If she grows up as fast as Jessica did, in a couple of months she'll be in school, and in a year or 2 she'll be married and having babies of her own.I still have to make the filling for my chicken pot pie tonight, so I'll close this by wishing everyone a blessed Sunday. Apart from the fact that Jessica and Jason will hardly see each other her new hours do sound good shell get time with Emmy during the day :)

Your pot pie sounds great.

I haven't decided about tomorrow except that it will be simple. I have chips and dip (both on the naughty list)for the Super Bowl and I may throw some burritos together for dinner. I discovered No Fat Sour Cream and my life is now complete.

Good Morning Diane,
It's 3:03a.m.
and I'm frying some bacon to make my DH some bacon and cheese sandwiches to eat before he leaves out around 5:00a.m. He requested that he wanted those kind of sandwiches last night. I've got coffee ready also. Your Chicken Pot Pie sounds so good. How do you make the white sauce? I may have to try this recipe sometime. I'm not sure if the kids would eat it, but I know me and DH would. I hope Jessica likes her new job. I remember when I worked 2nd shift and 3rd shifts. It was hard on the girls because I didn't get to see them as much except for the days I was off. When I worked, my Mom would keep the girls for us and I wouldn't have to pay for Daycare. I did give her some money each week to help buy diapers and things like that tho. The pictures of you and Lamar with Miss Emmy are just beautiful. She sure is growing like a weed. They do grow up fast let me tell ya. Both of our girls were walking and talking up a storm by 8 months. I sure do miss those days sometimes. Take care my friend and have a great day. I've often told Cliff that if it didn't tie us down so much, I'd find myself one baby to babysit (and spoil) because I miss babies in my life. However, that would mean no more impromptu horseback and motorcycle rides, and I love those. So I guess I my life shall remain babyless (youngest grandchild is 7).

Your chicken pot pie sounds so good. I usually make it with a can of cream of chicken soup and frozen veggies with a frozen pie crust thrown on top. Your way sounds nice and easy!

Emmy is growing up so fast. It's amazing how much they learn in the first year, isn't it? Time flies.

We're going next door to Donna's for the Super Bowl. She and I bought stuff yesterday for dinner. Chicken tenders, jalapeno poppers, Bagel Bite little pizzas, pasta salad, chips and salsa - a very balanced and healthy meal!!

Chicken pot pie sounds delicious. I think we're going to have leftover moussaka and cake from my husband's birthday dinner last night. A Greek friend of ours made the homemade moussaka--a traditional Greek dish made with layers of beef, potatoes, and eggplant baked in a tomato sauce. She sent us home with leftovers so I think we'll just heat them up today--along with the chocolate cake! :-)

Emmy standing and crawling!! That child was just born last week! I started blogging not long before she was born, so she has been an important part of my blogging experience. I love seeing her sweet pictures!

The chicken pot pie sounds great and easy too. I'm all for that!! I have not eaten anything today and it's after 1 p.m. now. Still don't know what I'll have! Some Mexican restaurant might be calling my name!!! :)

I sure enjoyed those pictures of Emmy! She is so cute!! Hard to believe how the time flies by. You are right, she'll be out on dates before you know it!!

She's getting so big,Diane. What a little doll. I can just see you trying to keep up with her now that she crawls like lightening. LOL

Tacoritos here. I was so happy when I figured out how to make them, it took a while for it to dawn on me, they're also very economical. And I had some apples I needed to use, so I made an apple cobbler too.

So tacoritos and apple cobbler and the super bowl! Hope you have a nice Sunday.

Emily always has a smile on her face and so does grandma.....
Dinner today will be very simple, hot dogs! With it being super bowl Sunday, I want to keep everything simple. I fix some dips and we'll have that along with our hot dogs. If we were having company I might have to get more complicated, but it will just be TF and I. Bonnie is spending time with the singles at her church and Jen, Justin and William have plans with friends. Actually, I glad it will be just me and TF. If it were colder, I would turn on the fireplace and we could cuddle in front of it. I hope Lamar and his brothers have a good time together. Talk to ya later.

I can see a proud Grandma and so you should be. Emma is a darling. She will grow up FAST! I can't believe the boys are 10 and 12. Seems like yesterday they were the age of your Emma.

She's growing just like a little weed and you're right, she'll grow up so fast.
Sunday dinner today is homemade minestrone soup, garlic bread and salad. It's rather cold and dreary here, so soup is a good choice.

Your chicken pot pie sounds yummy! You're like my mom - she rarely uses a recipe! I told her she needs to start writing her recipes down for us - especially our favorites - so we can attempt to make them sometime!

I had leftover spaghetti from last night. I just boiled the spaghetti - the sauce was homemade by my best friend's mother. It's sweet and yummy!

Love the Emmy pics! She's a doll baby and growing! Wow! Hard to believe she's 9 months old already!

The thought of that chicken pot pie makes my mouth water Diane!
However, since I belong to the "I will take any opportunity that offers itself not to cook" school, we are having DiGiorno pizza for supper tonight. After all, even if you don't care who wins, you shouldn't have to get up in the middle of the Superbowl and fix supper. So that's it for me

Hello dear friend. Your dinner sounds yummy. If I lived close enough I'd come by for a bite!
I made another big pot of chicken veggie soup today but it isn't as good as usual but it was my dinner anyway.
Little Emmy just keeps on getting cuter and cuter. Thanks for the sweet pictures. I'm so glad you are getting pictures of her with you and grandpa too. Someday those will mean a lot to her.

Sounds like everything is going well with Jessica and what a great thing that you can enjoy the baby for a few hours a day. That all day thing would just be too much for most anybody.

Isn't it amazing how much energy those little ones can zap from G'ma? I used to think that women's ability to have babies stopped when they reacjed a certain age because if we laid the baby down we would forget where we put it.... then I decided it would because we would be too tired to pick it up. Probably a good mix of the two.

Good Afternoon Diane,
I hope things are okay where you are. Everything here is good as well. They did sound the sirens last night. It was due to us getting the tail end of a Torndado that was moving up from the South. We only got a little wind and some very heavy rain and thunder and lightening. I stayed awake all night and waited on my DH to get home. He finally got home around 4:15a.m. this morning. After I took the girls to School, I came home and went back to bed. His Uncle came knocking on the door around 11:30a.m. They won't be leaving out going up North today. The place in Memphis where they get loaded at is right next to that DHC Warehouse that got hit. So, their Driver Manager called his Uncle this morning and told them they would leave out on Sunday going to Salt Lake City. All other runs had been cancelled. He is getting some extra time home, but it is hurting us by 2 pay checks. We will be okay tho. He has gone to West Memphis now down to the Pilot to scan their bills so they will get paid on Friday. How is Jessica liking her new job? I finally put up a new post today and told about the damages here in Arkansas and Tennesee. I have just been down in the dumps the last couple of days.
