Sunday Dinner, September 16, 2007

Guess what? This week I'm actually cooking Sunday Dinner! I know, it's almost impossible to believe, but it's really, really true. If you really don't care that I'm making Sunday Dinner this week please keep it to yourself, because I have delicate feelings and I would be irreparably wounded by your indifference.

No, not really. I just had a sudden wave of drama break over me. I think I'll be all right in a few minutes.


I'm making my MEXICAN CHICKEN CASSEROLE for Sunday Dinner this week. You can find the recipe by clicking on the link above, which will take you to my RECIPE BLOG.

This recipe has been in my family for at least 30 years. It used to be a Sunday Dinner favorite when everybody gathered at Mom's and Dad's on Sundays. I know everybody and his bird dog has at least one recipe for Mexican Chicken Casserole but this is my gold standard. I have yet to find one better than this one, and it's really easy. The most time consuming part is cooking the chicken, waiting for it to cool and then
skinning, boning and tearing the meat into bite size pieces. The rest is just mixing a few other ingredients together and heating them, then layering everything.

A good thing about this recipe is that it freezes and reheats well. I often double the recipe and freeze one of the casseroles for a quick meal at a later time. All of my family knows that I'm notorious for disliking leftovers and anything rewarmed but this is one of the rare exceptions to my rule.


Yet another good thing about this recipe is that it makes a 9x13 baking pan chock full of casserole. I often split this between 2 smaller pans so that I can get more meals from one recipe.

Once again I have no idea how many will be here for dinner so I'll make one big baking pan of casserole and if there's any left over I'll save it for later or freeze it for another meal. At the moment I'm not planning anything else to go with the casserole, but if I have a crowd I'll open some cans of vegetables to supplement the entree.

That's about all I have tonight, but I would like to mention that suddenly I have 2099 (!!) new posts in my Bloglines.

This indicates to me that either:

(a) All of my blogging buddies have been holed up for weeks, feverishly writing blog posts to release at the same time today (and I didn't get the memo so I'm hurt that I wasn't in on it!)

Or,

(b) Bloglines has jumped stupid yet again.

I looked and had 18,593 (yes you read that right). I marked them ass as "read" and started over. It seems to be okay now.

Chicken sounds yummy. I buy the 10 lbs pkgs of legs/thighs and skin and repackage them. Saves the skinning later and Ray's supposed to watch his fat intake. All I'd have to do is pull them off the bone.

He's still in hospital so I won't be cooking tomorrow. I've been polishing off leftovers since I've been by myself. Just used the last of them thought so I'll have to figure out something. I have some t.v. dinners in the back of the freezer. Maybe I'll be really lazy.

Just heard from Cecil so knew what your menu was going to be.

Hugs and thanks for the "microwave warning". I almost never use plastic; usually it's my Corelle or Pyrex. Plastic gets misshapen and stained too easily.

Bloglines can be beasty. Have you tried the Google reader yet. It's proving to be much more dependable..
Your mexican casserole sounds delish.
I'm thinking some type of soup will be cooking here tomorrow, even though it's really not "soup weather" yet. It just sounds good and perfect for a Sunday!

I think I'll be having leftovers. I baked some chicken breast yesterday, made mashed potatoes and steamed some fresh green beans from my garden. Problem is I wanted gravy, really bad, and there wasn't enough drippings from the chicken breast to accomplish that, so I opened a can of cream of chicken soup and chopped up some of the chicken into it. Was it ever delish! The soup really made the chicken more moist. I had it again today with steamed peas. There's just enough left for one more day. I'm not sure what veggie I'll have with it though.

Don't you just love the cooler weather? Apparently MIss Emmy does, too!

I think today will just be DC and me - at least I hope so since I"m making a small meat loaf for just us. It'll be a surprise if the kids show up!

I'm actually cooking tonight - tenderloin, rice with mushrooms and peppers, and green beans. To muster the energy to do that, I'm off for a nice long Sunday nap - my favorite thing about football season - they don't notice if you go missing for 3 hours at a stretch! Happy week Diane. xoxoxo

I'm pretty sure Bloglines jumped stupid again. That plumber has been popping up a lot this weekend. LOL

If I don't finish my cleaning in the dining room, which is the room I chose to start this madness with, we may be having Simple Green soup tonight. Meantime, Rob's eyeing the flank steak I have thawing. :-)

Marinated, broiled flank stead, baked potatoes and something green. Maybe asparagus salad. The poor man only gets a really dinner twice a week so I'm cooking tonight!

Happy new week to you. Cameron's back to daycare tomorrow! That means I can move on to the living room in this fall cleaning spree I'm on. Ugh.

Hey Gal...I was by earlier but was pressed for time so now here I am back ;)

We've been out and about today...found a little ice cream stand that advertized pulled pork sanwiches...they were ok...I'm still craving smoked meat!!

We just had a McD's and I'll be makin' some cinnemon rolls a little later...I never can spell that right, but you get the gist right?

Anyhow, I so enjoyed talking to you last night...you are such a great friend!

Your Mexican casserole sounds yummy. And it freezes well with the chips? Do you freeze it cooked or uncooked?

Shelby and Dom are both working, so my Sunday dinner consisted of some leftover homemade macaroni and cheese and a bowl of raisin bran!

Sounds yummy - I cooked a roast today in the crockpot AND put on a pot of pinto beans with a ham bone I had saved just for this purpose. It smells heavenly... I know what we'll be eating for a few days with some cornbread! Have a good one!

I actually cooked Sunday dinner, well not really the crock pot did all the work but I did make cornbread and walnut brownies to go with my beef stew. It was good and first meal I've cooked on Sunday in several months. We love Mexican chicken so I'm going to try your recipe. Thanks for posting it. Have a great week.

Our weather is starting to feel fall-like too, so I made roast beef and mashed potatoes for dinner last night. You know that dinner is my evening meal, right?? *smile*

That recipe sounds great. I will have to give it a try and I will use some of that broth to the soup mixture. I bet you could cook the chicken the day before and put the cassarole together really quick on Sunday.
