Sunday Dinner, March 7, 2010

It's been a long day and it's not over yet, my friends. However, for once I already have my Sunday Dinner menu decided upon and as soon as I get this post published I'll commence to cooking feverishly to make it happen.

Part of my long day involved doing my monthly grocery run to Wal*mart on Saturday morning. I picked up a beef chuck roast to cut up into stew meat. It's big enough that I think I can get 2 meals from it, so I'll probably cook only half of it for this meal.

I'm going to make beef stroganoff with the stew meat. I'll also cook a big pot of wide curly egg noodles to serve with the stroganoff, and I'm going to cook some baby green lima beans. I have a pot of leftover green beans cooked with ham and potatoes that I may warm up to add to the meal if anybody shows any interest in them.

So, homemade beef stroganoff, curly wide egg noodles, baby green lima beans and possibly green beans cooked with ham and potatoes.

Oh, and I'm making 2 HONEYBUN CAKES (scroll down to second recipe) for a bake sale that my church ladies' group is sponsoring, so I'm going to buy one of them and keep it for dessert, so we can add a honeybun cake to the menu.

I spent nearly $140 (remember, that's for a month's worth of groceries) and almost every item I bought was food. The only exceptions were some coffee filters and some eye drops and a $3 prescription copay.

After spending nearly $140 I could almost carry every single grocery bag in both hands. If you discount the 10 lb. sack of potatoes I got, I think I could carry everything in one trip from the car. *Sigh......*

We made a quick stop at Kentucky*Fried*Chicken to eat from their lunch buffet before we headed home. I put up all my groceries and then crashed here in my recliner with my laptop to do a little Facebooking and then napped a bit.

I think I feel worse than I did before I napped though. Hmm...And I still have to cook the stroganoff and lima beans and bake those cakes. I'm going to do my best to get my cooking done and study my Sunday School lesson as soon as possible so I can (hopefully!) get to bed at a decent hour. I think I just need some sleep and I'm hoping I'm not getting sick.
Lamar's eye surgery went fine on Tuesday and so did his follow up visit on Wednesday. Lamar says he can't tell any difference in his vision although the doctor seemed to think the surgery improved his vision a bit. Lamar still has no vision in half of his left eye, and the half that does still have vision is 20/70.

Before all the trouble with his eye Lamar had better than 20/20 vision in both eyes, so this has been a real struggle for him to adjust to this diminished vision. Lamar has no hope that he'll recover any sight in his damaged eye and is ready to move on now. He says he won't be having any more surgeries or treatments unless the doctors can promise a big improvement in his sight.

It's been 10 months since the initial virus attacked Lamar's eye and none of the treatments, medications or surgeries have restored any of Lamar's sight or improved the vision he has left in that eye. We figure if there was going to be any improvement it would have already happened after all the procedures and medications he's tried.

At this point we're just grateful that Lamar still has excellent vision in his right eye and that the virus didn't do any other damage to that eye or attack another part of his body. Viruses can do some strange things, that's for sure.
I finally got my inside utility room/pantry cleaned, decluttered and reorganized to suit me. Other than magically having more room in there I've done all I can do to best utilize the space I have. I bought some clear Rubber*maid plastic containers with screw on lids to use as canisters and it's made all the difference in world. I can see everything without having to open the canisters first and the square containers fit closely together with no wasted space, unlike the round canisters I was using before.

I still have a lot to do here in my living room and that's next on my to-do list, whenever I get around to it.
To report on the flannel sheets I mentioned a few weeks ago, I can just say, "eh." They'll be okay when it's really cold, but the rest of the year they're going to be too warm for me. I also don't really care for the fact that the nap on the flannel clings to you as you're trying to scoot or turn over in the bed. I still much prefer my 100% cotton sheets, thank you very much.
There are signs of Spring all around now. My daffodils are loaded with plump buds and my flowering quince is as well, both ready to explode into bloom any day now. After a colder and snowier than average Winter for our area, we're finally beginning to warm up here in Northeast Arkansas.

Our temps have still been below average for this time of year, but slowly the grass is greening up and all the trees are showing those feathery signs of budding out. The last several days have been sunny and gorgeous with highs near 60F, though it's still dipping below freezing at night.

I still prefer Winter but Spring romances me with its luscious greens and joyful flowers and crystal clear days. If we could just skip those miserable Summer days when it tops 100F and you can wring the humidity out of the air, that would be just grand with me. But nobody asked me, now did they? So I'll continue to take each day as it comes and be thankful for every day that God allows me to open my eyes to a new day.
I think I've probably bored you all enough and I should get busy in the kitchen if I don't want to be up half the night cooking and baking.

Dinner sounds really good, Diane... I still haven't decided what I'm going to cook... I think I'll just wing it tomorrow....

Glad Lamar is feeling better and hoping that he gets some improved vision soon.... Sometimes, after surgery, it takes a while for things to heal before you see any difference... Let's hope he gets better as the days go on....

I know it's been a big week for you with Lamar's surgery and watching Miss Emily... Hang in there Lady Bug....

Spring is trying to pop out here too... I have some tomato plants ready to go into the garden as soon as we know it won't freeze anymore here... I love spring except for all the pollen.....

Spring has sprung on Diane's blog - and sounds like in Arkansas as well. We've had some nice days this week, but no budding yet that I can detect. Won't be long now, though.

Have no clue what's for dinner tomorrow. We ended up with the girls again today - long story that I don't want to bore anyone with - and I haven't had time think again this week. I did take out a small pork tenderloin from the freezer - they are yummy and easy.

Tell Lamar that some times things have to settle in before you see an improvement after eye surgery. I know that he must be a bit frustrated by all of the set-backs, but my hope for him is that he has a marked and positive refinement in his vision.

I know that you already give him that kind of encouragement; I just had to add my two cents worth!


As for our Sunday Dinner, we will be having baked glazed ham, green beans with butter and dill, and sweet potatoes roasted with olive oil, garlic, onion and parsley, and dusted with parmesean (I think that's how you spell it!)

I will then use the the hambone to make my favorite butter beans with some of your buttermilk corn bread! ;)

Sounds like you've had a busy (and productive) weekend!!

Matthew came home last night and will be heading back to Richmond after dinner...we're trying a new sushi place at Town Center that's gotten great reviews, so we'll see!

Still praying for continued improvement in Lamar's eye...perhaps once all the (internal) swelling and inflammation from the surgery is gone, he'll see some of the improvement the surgeon believes is there...

spring has not sprung in utar, more snow today, sunday, and no sunday kitchen meals, just back from a bike race and don't have nothin in the house to cook, i had always thought the eye had a particular propensity to HEAL, so i am not as convinced as you guys that he is through healing>>>>have visited jess on her blog and she seems coping >>>not perfectly as can be expected but little emmy seems to bet the center of everything for her and for you>>>love that she has lost some weight, that can't help but be real positive for her

I am so, so sorry to hear that Lamar's vision hasn't improved. I think it's obnoxious that the doctor says it has improved, even when Lamar says it hasn't! Shouldn't Lamar know if his vision is improved?? Well, thank God his other eye is still working well. I hope he can keep his spirits up.

Your Sunday dinner sounds delicious. As always!

I can't wait for spring to happen around here. It'll probably be a few more weeks. We still have snow on the ground, but it's melting quickly. I'm ready for spring!

I fixed fried pots. with hotdgos cut up in them and cheese melted in, purple hulled peas, and cornbread.

Saturday I cooked a large butt-end ham in my boil and bake style. Hot slices were served to my husband and my visiting son for sandwiches last night. All but 4 cups of the broth were frozen. The fat was cut off the ham for the chicken bucket. The rest was sliced and frozen for the grand kids visit over Spring break and the bone was frozen to use in future batches of beans. I soaked a little more than a pound of red beans overnight. This morning I added onions, green pepper, garlic and ham chunks and cooked the beans. I cooked a pan of rice and I made a pan of jalapeno cornbread and that was our Sunday lunch. I'm going to have to double my exercise the next few days to make up for what I ate.

Spaghetti and tomato sauce for us. Lot's of garlic, cayenne pepper and red wine in it.

We can feel spring in the air but we have at least two feet of snow to get rid of yet, so it will be a while!

There was no Sunday dinner cooking today for me. Had to go grocery shopping and came back wiped out. Glad to hear that all is well with you and will keep praying that things continue to go well for you and yours.

you got square cannisters with screw on lids? how does that work? how do youscrew on a square lid?? just wondering.


I understand Lamar calling it quits on being the eyeball guinea pig. but I really had to snicker a bit over his 20/70 vision. I realize he's missing part of the vision in that eye totally....but still....I'd KILL for 20/70!! I'm 20/400+ no joke. tell him there's all kinds of adorable glasses he can choose from....that or wear an eyepatch and growl at everyone like Long John Silver. ;-)

Hey, Diane!

Will continue to pray for Lamar. My hubby has the same issue - not a virus attacking, but diabetes. He also had better than 20/20 and it is very hard for them to adjust to this new "normal". He doesn't like the surgeries, either, but I do think they have helped a bit. He has to do them because he gets bleeding behind the eye.

Hope you're feeling better. There has been a lot of weird illnesses going around this year.

Your dinner sounds wonderful, as usual. I ended up doing hamburgers. It's been pretty busy around here as we've moved my MIL into the house with us. Big adjustment for all concerned. :)

Your meal sounds wonderful as usual Diane! I ate at Ruby Tuesday's for dinner on Sunday. I like their food and they have a wonderful salad bar!

It's been so nice and warm here too! I'm loving it!

I know it must be hard for Lamar with his eye, but like you said it could have been worse and at least he still has some vision in it.

I love beef stroganoff (or stroke enough as Shawn used to call it when he was little! lol) and haven't made any in a long while so now you have me wanting to make some again:-)

Isn't it ridiculous how expensive groceries are? I always say how rich we'd be if we didn't have to eat! lol

Such a shame that Lamar's latest surgery hasn't helped his eyesight in that eye but at least he gave it a try. My mom has little sight in her left eye and that's why she was anxious to have the cataract removed from her right eye so that she could see so much better. Her left eye can't be helped so she's not even going to attempt having surgery on that one.

Spring is springing early over here as well, nothing but sunshine and temps up in the 40's...so unusual for us in March. It's been a really weird winter all around.

I haven't had Kentucky Fried chicken id years but I sure remember how 'finger lickin' good it was!! I remember hearing they use n=many spices to get that awesome flavor and I once tried to copy it. It actually turned out very good but not quite like the real thing.
My Sunday dinner was most likely soup and a sandwich. I made a big kettle of Chicken veggie soup again yesterday byt it's not as good as usual. I must have forgotten something.
I have a couple ripe bananas on the counter that are screaming BANANA CREAM PIE at me but I can't afford the fat and cholesterol. DANG!
Well maybe I could make some vanilla pudding with fat free milk and slice bananas in it and put a dollop of cool*whip on top. At least that would eliminate the fatty pie crust.

Thanks for all the news. I was interested to see what you spent on groceries for a month. It seems I spend way too much for two people. The cost of food is incredible. Beef stroganoff and noodles -- yum! I don't put mushrooms in mine (yuck), do you? I agree with Lamar about no more surgeries-- glad he is okay.
