Sunday Dinner, July 6, 2008

I don't know how anybody else feels, but this seems like the second or third Sunday in a row now. When a holiday falls in the beginning or end of a week, making it a 3 or 4 day weekend, it seems like every day is either Saturday or Sunday.

Anyway, plans are in the making for Sunday Dinner here at Diane's Place. You may or may not be overjoyed that I'm cooking again this week. Totally your call, now isn't it?

If you should squint just right at that graphic on my Sunday Dinner button you might perhaps notice that there's a chicken on that covered casserole dish. There's your clue to the entree this week: Homemade Chicken with Jasmine Rice.

And I'm also cooking a big pot of pinto beans with bacon, a big cast iron skillet of my homemade cornbread, and some garden fresh sweet corn that I'm going to cut off the cob and fry.

Don't be scared now, fried corn is really good, a true Southern delicacy, and not nearly as scary as it may sound. You just shuck the corn as you'd normally do for corn on the cob, but instead of putting the corn in boiling water to cook, you slice the uncooked corn off the cob, then put it in a skillet with a little oil, butter or bacon grease, or a combination of any or all of those three. Add a tablespoon or two of water, then fry and stir occasionally for about 5 minutes. Add salt, pepper and sugar to taste and serve, or you can thicken it with a little cornstarch and water if desired.

Good stuff! My Mama loved fried field corn, and as she'd say, "It'll make you hip up and pop your Thomas!" Whatever that means, but it sounds funny. ;-)

Gotta use it or freeze while it's still fresh, you know. I'm also fixing some of my TEXAS HASH for supper.

After supper I'll put the beans and the chicken on to cook for Sunday's dinner. After the beans cook I'll refrigerate them overnight, then warm them after I get home from church while the rice is cooking for the chicken and rice.

After the chicken gets done I'll debone it and tear it into bite size pieces, then put the chicken and broth in the fridge for the night, in separate containers. After the rice finishes cooking in the broth I'll stir the chicken into it and let it all heat together.

In the meantime I'll be baking my cornbread and cooking the fried corn. It should all get done about the same time if I do my job right.Lamar and I spent the 4th with Jessica, Jason, Emmy, Cecil and Sue. Jessica cooked dinner and supper for us all and it was really good. For dinner Jessica cooked fried boneless pork chops, garden fresh corn on the cob, garden fresh green beans, garden fresh oven fried yellow summer squash and biscuits.

For supper Jessica made my MEXICAN CHICKEN CASSEROLE. It was all really good, and we all had a great time together playing with Emmy and just visiting together. I was still so full from dinner that I didn't eat much of the casserole.

Between dinner and supper Emmy took a nap, so we left Jason there playing his computer game on his laptop and went to the mall and a few other places. Emmy was napping so we left her with Jason.

Actually, Jessica, Lamar, Sue and Cecil went to a few other places. I made myself at home at Barnes*&*Noble with a book and a cup of coffee and stayed there the entire time.

Later in the evening we all loaded up and went to watch the fireworks display at the local fairgrounds. The skeeters were out in force so we had to fight them off, but the weather was great otherwise and we had an ideal spot to watch the fireworks. We had some blessed rain on the morning of the 4th but it was mostly clear and a little cooler than average for the evening, about 72ºF.

Emmy was sleepy and cranky by the time they started the display at 9:30 pm, so after the first 10 minutes or so the new wore off the experience for her. She spent the last 15 minutes of the fireworks display in the car with Cecil, playing with all the knobs, handles and doohickeys and was asleep in her car seat before we got out of the parking lot on the way home.

All in all, a perfect 4th. Food, family and fireworks. It doesn't get much better than that. I hope y'all had a great 4th as well.As usual, I still have to study my Sunday School lesson and I also have chicken to pick off the bones in a bit and corn to shuck and cut off the cobs.

Oooh, fried corn sounds delicious! I've certainly never heard of such a thing, but I just might have to try it!

Sounds like you all had a great 4th of July! We went to a picnic and I brought your potato salad! And guess what?? No leftovers! And I made enough for a football team! That is some good, good stuff! I got lots of compliments on it! So thank you! :-)

I hope you're feeling good, Diane. I've been thinking of you and keeping you in my prayers, as always.

It sounds like you had a great time with food, family and fireworks. I went to the church pancake breakfast with a crockpot breakfast cassarole. I had put ribs, chicken and sausage in a large pan, covered it with foil and into the oven before I left. I cooked it all day on 225 degrees and the meat just fell off the bones. We had potato salad and baked beans to complement the meat. Then TF and I went to the Woodlands to watch the fireworks. We got there early and watched all the other people try to find a parking place. The fireworks were great and no skeeders for us. Oh yes, I watched my favorite 4th of July movie, "Yankee Doodle Dandee" on TV and took a short nap to boot. I slept like a log last night.

Sunday Dinner? I have no idea!

It's so late Saturday night, for me, it's ridiculous. And my week is so discombulated, I don't know if I'm coming or going. LOL

I think we're having fried chicken and mashed potatos and country gravy, but boy, don't hold me to that.

To tell you the truth, with ALL my kids under one roof for a few days, I don't even care. The one thing I do know for sure, is I'm making some cookies. I'm heartily sick of Cameron saying, as he looks at Nana's STILL empty cookie jar, "Nana, I help you. Lets make some!"

Pathetic. LOL

I have NEVER had southern cooking, so I am totally fascinated with all your ideas, Diane! Fried corn sounds delicious!

Sounds like a perfect holiday weekend for you and your family. That's heartwarming.

Here, for our Sunday menu this week I'm going to cook [already started] some dried peas and a big slice of 'defatted' ham. Gonna make Split Pea Soup. It's a chilly rainy morning and soup sounded really nice. I'll make some baking powder biscuits and toss a green salad and pickled cucumbers to serve with the soup.

For dessert it's gonna be fat free frozen yogurt with fresh strawberries and angel food cake.

Fried corn? Now that's one I am going to try, for sure! Love corn, period! Your Sunday dinner menu sounds so-ooooo good! Why do you have to live so far away????

I don't think I'm cooking anythingn today. No one is coming, so it's just me. I m,ay go into the city and do a little shopping at Lowe's, and then just pick up a Reuben at Schlotsky's Deli! Love their sandwiches!!!

I slept all day yesterday and then the RAIN woke me! Yes, we finally got some rain! Not enough to help the EXTREME drought we're in, though. 5 counties in the upstate listed in drought conditons, but we are at the worst, labeled as EXTREME. The others are listed as SEVERE. I love a rainiy day myself!

Wow, another fabulous meal. You really do make some amazing meals. I am definitely trying the fried corn and the cornbread recipe. Hope you are feeling better this weekend - you have been in my prayers. Glad you have such a wonderful weekend. Unfortunately, for us, we don't get to watch fireworks here in Flagstaff, being surrounded by dry pine trees.
We did have a nice 'day off' and just hung out together. Actually, we spent some time in B & N ourselves! Love that place.
We had easy potatoe and egg burritos for lunch and snacked the evening away.

Oh my that supper sounds good!! My grandma used to make fried corn (she was originaly from Oklahoma) and I love it! I will be making some for my kids soon for sure.
We had a really silly snacky supper. I need to do better tomorrow. I love to get ideas from you. We had a big dinner and late..so we ate weird stuff like popcorn, cheese and crackers, grapes and pickles...just snacks. The kids will want a big breakfast tomorrow I bet!!

Hi Dianne Your Sunday Dinner sounds so yummy never cooked corn like that I must try it. We put the cob into boiling water then dob lashing of butter and pepper.

Your Sunday dinner sounds delicious. As usual, I'm late getting over.

I love fried corn. Grandma used to make it and we haven't had it in years. When our sweet corn is ready (August in Ontario) I am going to fry us up a batch. You always give me great ideas for different things and I appreciate it.

This Sunday I didn't cook. Hubby and I took a much needed break and headed to the lake for a foot long hotdog. It was good.

One day I would love to go over to your place and try all of that delicious sounding southern cooking that you do!!! When Steve & I were at Cracker Barrel for the first time, we felt like the menu was so alien to us because so much of it were dishes we'd never heard of before...well, I'd heard of them through my southern living blogging friends! lol He wanted fish but was too chicken to order the catfish! lol

Sounds like a perfect day spent with family on the 4th of July. Aren't them skeeters just horrible...can never sit outside in the evening without being eaten alive!!

I didn't get to talk about our Sunday dinner - nothing spectacular - Kristen and the kiddoes over for pork roast, m. potatoes and gravy, corn, and fresh pineapple - simple, simple. No dessert even. It's now Monday night - Had the kids a lot this afternoon so Kristen could get lots of business done - I'm TARD!

How are you feeling? Have you found out anything more yet? I have been thinking of you!!!

I've seen those combs you described in your comment, but I've always been afraid to get one. This feral cat is short hair, and she had that large a mat! I'm sure her back feels so much better now. I think it was caused from her lying up against the back of her little hiding place, the pink litterbox lid, where the fur just kept rubbing against it.

I had another feral in the laundry room, medium hair and quite fluffy, that had one on her back, a few months ago. She would allow me to pet her but not to pick her up. So one day, I had the little scissors in my PJ leg pocket and was petting her as usual, and then just got her by the scruff and went to work on her! It was hard with just one free hand, but after 15 minutes, I had her mat off, too. She purred the entire time I was working on her! You have to be careful and go THROUGH the mat and cut vertically, not horizonally as you could cut the skin off along with the mat, so it was just a job that took some time doing. But this other one is sooooo feral yet. It keeps me busy working on them all, I know that! LOL Thanks for the information!

I make fried corn took, but haven't made it with fresh corn yet. I'll have to try it now that you told us how.
My mom used to fry up some bacon, then dump in a can or two of drained corn and sort of stir fry it till some began to turn a nice brown. It smelled just wonderful too.YUM!

That food sounds so good and fried corn is wonderful stuff. No argument from me on that one! Your Mom was right, it will make you hip up and pop your Thomas!! Never heard that before!!

Oh, my goodness! Everything sounds SO yummy! I especially think the fried corn sounds great and I love your Mom's saying. My Grandma had little sayings like that, too, that put a smile on my face.

I was reading about your blood sugar and I'm so glad you got a meter. I'm battling the same thing and am really trying to watch what I eat and trying to lose. 2 pounds off is great! You're doing good. I'm trying to do it with diet and exercise too (although, I have a bad knee) because my hubby is diabetic and on insulin and I'd rather not go there.

I'll be keeping you in my prayers! Glad you had such a good 4th!
