Sunday Dinner, June 22, 2008

I'm still not quite up to snuff, but I'm feeling a little better. Thanks to everyone for your well wishes and concern for me. I do appreciate it and it warms this ol' gal's heart. Y'all are the BEST!

More on how I'm feeling in a bit, but I do feel well enough to cook Sunday Dinner this week.

I have some lean smoky bacon chunks boiling until they're tender. I'll add some canned green beans to the pot with the bacon and cook them down a little. I'll set them off the heat to cool and refrigerate them until I get home from church Sunday afternoon. I'll peel some potatoes and dice them into medium chunks and cook them with the green beans and bacon until the potatoes are tender. I might even throw in a little chopped onion when I add the diced potatoes.

I also have a big pot of chicken parts stewing on the stove. I'm going to make homemade chicken pot pie with the chicken meat and broth. I have some canned mixed vegetables that I'll add to the broth and chicken meat, then I'll add some milk and thicken the whole concoction with some cornstarch and flour.

After the filling cools I'll refrigerate it until needed Sunday afternoon. I'll start the filling warming on the stove top while I stir up a quick batter for the crust. I'll beat an egg, a little milk and a dab of oil, and enough flour to make a thick but still pourable batter, then pour it evenly over the filling and put it into the oven until the filling is bubbly and the crust is golden brown.

There's a picture above and to the left of one of my chicken pot pies, or maybe I should say, what's left of 2 chicken pot pies after my crowd fell on them like a plague of locusts. The first baking pan was pretty much dead on arrival. Rest in peace, dearly departed and delicious chicken pot pie.

I don't really feel like typing up the chicken pot pie recipe tonight but I'll try to get it done soon and let y'all know when I post it on MY RECIPE BLOG.

Give a shout out in the comments if you want to participate this week.As I mentioned earlier I've not been feeling well the last several days. It's not any particular thing that I can put my finger on and say, "this" is what's making me feel yucky. I've just generally felt bad. I do feel a little better, but I still wouldn't want to try to whup a bear with a switch.

Last time I went to my doctor he told me I was pre-diabetic and borderline to be considered a diabetic. He also told me that I could go full blown diabetic at any time and to be aware of any sudden changes in my body, so I'm wondering if that might be the problem. I have an appointment with my nutritionist on July 1st and it usually takes 2 weeks or more to get in to see the doctor, so unless I get a lot worse in the meantime I'll just keep my original appointment rather than try to get in sooner.Enough of that. Back to food again.

Earlier in the week a new blog reader emailed me to ask if I had posted the recipe for my potato salad on MY RECIPE BLOG. At that time I hadn't, but I now have the recipe for DIANE'S HOMEMADE POTATO SALAD posted on my recipe blog. Just click on the bold links to go to the recipe on my recipe blog.I had Emmy all day today and I'm amazed at how fast she's picking up new words and gestures. She's a smart little thing even if she is my grandbaby and I'm just the least bit biased. As much as I love her, I'm also TARD and ready for my shower and my freshly made bed.

I've already studied my Sunday School lesson but I still have to pick the chicken off the bones and make the filling for the chicken pot pie and then I'm going to take my shower in a bit.

One of my favorite things in the world is to take a shower and get into a freshly changed bed. Oh, bliss! The only thing that would make it better would be if I'd hung the sheets and bedspread outside to dry in the sunshine. I'll settle for freshly laundered in Gain detergent with Gain liquid fabric softener, then into my dryer. That's a very close second best. Y'all have a wonderful Sunday. Hi Diane,
Sorry you haven't been feeling well. Hope the Doc can pinpoint what's up.
I was super busy this past week with my cleaning business. A blessing for sure, but hard work.
I'll be making egg salad sandwiches for lunch and homemade pizza for dinner. Since the oven heats up the house so much I'm gonna try doing my pizza on the grill with a Pampered Chef pizza stone thingy a friend gave me. I did my tortilla chips on it the other night and they turned out all right...so hopefully the pizza will work.

Diane, as usual your Sunday dinner sounds wonderful. I can tell you are a great cook. I'm not very good at making chicken pot pie so I'll be waiting for your recipe.

I am so sorry you are not feeling well. Do you think maybe you are just tired from all you have to do with keeping Emmy, etc? Chasing after and tending to a small child can be very draining. I hope it's nothing any more serious than just being really tired.

Hi Diane,
I'm so sorry to hear you aren't feeling well. Fluctuating blood sugar can cause lots of symptoms. My mom was an insulin dependent diabetic and struggled to keep her blood sugar on an even keel.
Your dinner sounds yummy! It's blazing hot here (still) so we're going to grill tri tip and corn. I'll make a salad and that will be dinner.

Diane, it sounds like you could use a few days off from baby sitting Emily. Jessica, see if your aunt could watch Emily and give your mom a few days rest....

Your chicken pot pie sounds really good. I just got back from vacation and I am not sure what I will cook for Sunday dinner. I have some boneless pork ribs that I could cook.....hummmmm maybe that would be good.

Take it easy Diane and get some good sleep. Drink plenty of water. I'll be thinking about you and praying too.

Now, I'm sitting here reading your entry for today and I must say I am picturing one EXCELLENT cook! That pot pie sounds scrumptious. When I was single I lived off Swanson's Chicken Pot Pies! LOL And now you got me craving one.

Hope you find out what's wrong soon so you can get to feeling better. I have a friend (former boss) who is diabetic and who loves to cook, and now he said there's not much he is allowed to eat. He said nothing good, anyway. So let's pray you're not diabetic.

What time is dinner??? LOL Sounds like a delicious meal you are preparing!!!

Oh, I, too, love to jump into my clean bed after a shower!!! Nothing like it, huh? I can smell the Gain as I write! LOL

I take a shower every night before getting into bed. I agree with you--getting into a fresh bed is one of the best feelings ever!

I'm SO glad you posted your potato salad recipe. It's so odd, but the one thing I've been seriously craving during this pregnancy is potato salad. I don't know how to make it well, so I usually run to the deli and pick it up. Just two days ago I was almost frantic as I speed walked to the deli and grabbed a container of potato salad. Then I hopped on the bus, sat down, and ate that entire container sitting on a crowded bus! I couldn't help it! (But that is NOT something I would normally do. I'd at least wait until I got home!) But now I can make my own! Your recipe sounds amazing!

Today we had the nice spiral ham I bought at Christmas time and put in the freezer. It was way too large for the few of us, but I had to fix it sometime! I tried to program my new oven to come on while at church, but I did something wrong. So I just heated it at a higher level and we ate just a bit late.

I'm sorry you're feeling punk - hope it's not diabetes, but if it is, at least you'll have a diagnosis and treatment!

Glad you felt like cooking!

I made Chicken Salad and Macaroni & Cheese. The green beans and potatoes sound so good that I fixed some too! I just put a peach cobbler in the oven and I'm seriously thinking about making homemade ice cream this afternoon.

ahhh shucks girl, I hate it that you are feeling bad. The first sign I had of being diabetic was that I had to push myself to move. It was all I could do most of the time to put one foot in front of the other and move. I am praying for you that it is some little bug that the Dr can fix and not diabetes.

I am having green beans and taters today too..... MMMMMMMMM Good Stuff. I am fixing two really thick pork chops with a little bar-b-que sauce.

I have to tell you every time I visit you and see the picture of Princess Emmy smiling at me, I smile right back at her. She is such a cutey.

Well, here I am answering the question on Sunday rather than a day or more later! We had steaks, onion rings, a green salad and our 1 glass of wine we like with dinner. It was good and easy.

I am so sorry that you are not feeling well. I'm really glad you are keeping a watchful eye and remaining in contact with your Dr. Don't hesitate, however, to advocate.....advocate....advocate.....call that Dr. and demand an appt! So many things turn into NOTHING if caught early.

Oh Diane, I hope your health report is a good one. My husband had a diabetic scare which put the fear of god in him to change his diet and exercise habits. He avoided actually becoming diabetic. I hope you're feeling better soon!

I hope you are feeling better. I have had an ear infection for a week and a half and that made me feel crumby. LOL I see the doctor tomorrow and I'm hoping he will give me a round of antibiotics without much hassle. That is the only thing that gets rid of it completely.

I am going to try your potato salad recipe. It sounds delicious.

I know how tired little ones can make a body. I hope you enjoyed your shower and slipping in between the clean sheets. I also love a clean bed, especially when the sheets have been line-dried. I washed our sheets this morning and just when I was about ready to hang them out, a thunderstorm moved in. So alas, dryer-dried sheets for us.

I can't even remember the last time I saw laundry on a clothesline. You're right. There's nothing better than sheets dried in the sunshine. But Gain is a close second.

After being told for years that I was a "borderline" diabetic, I was told that there is no such thing. You either have it, or you don't. I have it. So does Jay. So far, I'm only on oral medication. Jay is on insulin. A good day with diabetes is a good day. A bad day with diabetes is a really BAD day. Be sure to be checked! HUG

Looks like I'm late for Sunday dinner, but it sounds wonderful. I do my green beans that way sometimes, but I gotta put in a pinch of sugar, and sometimes a smidgen of red pepper flake.

Just another get well soon note. I know that not feeling up to snuff isn't comfortable and usually irritating to say the least. Especially when you have things you want to do. I think it is a good thing that you love to cook and post recipies. Maybe you can begin finding and showing some good diabetic safe menus. Bet you would be good at that.

Your Chicken Pot Pie sounds so good to me. I haven't had supper yet but will warm up some left over creamy chicken and noodles and have some veggie salad with it later.
I just ate two cookies and now I'm not hungry enough to eat supper. Hee-hee-hee. See there's a little girl living inside me!

Oh dear, I do hope you're feeling much better by now? Hopefully it's just some kind of bug and nothing more serious. Our bodies sure can let us know when things aren't "right"!!
