Sunday Dinner, October 22, 2006

Fall is very much in the air in my little corner of the world, and it makes me want to cook comfort foods. Hot, filling casseroles and one-dish meals are great, and chili, soups and stews are back on the menu now that you can actually think without working up a sweat. Here's an extra for you. For my Saturday night supper I'm roasting a whole, small chicken, and I had some leftover grilled pork chops that I'm cooking with some sauerkraut until they're fall-off-the-bone tender, and I've got some butterpeas cooked. I can smell that chicken roasting and the sauerkraut and pork chops simmering as I type this. Man, I'm getting hungry! Hurry up, clucker!

Now for my Sunday Dinner: I'm making a homemade chicken pot pie. It's a one-dish meal like I mentioned. I'll boil my chicken and save the broth to make the white sauce, season it and then add some canned mixed veggies. Pour it into a greased 13x9 casserole dish, and mix up a simple biscuit crust to pour over it and bake. I'll go ahead and prepare it all except for the crust. I'll whip up the crust after I get home from church and then toss it into the oven until the filling is hot and bubbly and the crust is golden brown. I sometimes use cream of chicken soup for the sauce, but I don't have any right now so I'll have to make my own white sauce this time. It's not much trouble and doesn't take much longer. Plus, I think it's better with the homemade sauce anyway. The soup is just a shortcut to save a little time. I like this dish because it has meat, veggies and bread all in one dish. This is comfort food at its best, and it will certainly be good tomorrow since the high temperature is not supposed to make it out of the 50's and the low is supposed to be around 35 degrees.

Dawn tagged me for a meme and I'm working on that to post on Sunday night or Monday, Lord willing. I'm going to be busy for the next several days, so my posting may be rather hit and miss. Lamar, Jessica and Jason are taking me out to eat Monday night for my birthday, and possibly on Wednesday for our anniversary. I'll be 43 on Monday, October 23rd, and we'll be married 21 years on October 25th. Finding out I'm going to be a Grandma was the perfect gift for my birthday and anniversary, and Jessica's upcoming wedding and acquiring a new son just put the icing on the proverbial cake. Dinner: Well, when I posted my recipe for Chicken Divan last week, it sounded so good I decided we'd have that. And I may make gingersnap cookies today, too. Cookie jar is getting low - my oatmeal raisin cookies fly out of this house. So I need to restock and Sandra at Diary of a Stay at Home Mom posted a great recipe for CHEWY gingersnaps.

Ummm, chicken pot pie sounds yummy and comforting. It's so nice here we BBQ'd last night. We have leftover tri tip, so I'm thinking tri tip sandwiches on French rolls, with some butternut squash soup and salad.
If you post tomorrow, I'll visit again, but I just want to wish you the Happiest of Birthdays and a Very Happy Anniversary too!

Happy Anniversary! Happy Birthday! Man that must have been a busy week for you 21 years ago! Now you can roll the celebrations all into one. As usual, I'm here to make everyone else feel like super-cook. We're having Schwan pot pies and bag salad while we watch the football game. Nice, simple dinner snuggled up with a fire burning in the fireplace. Hubby is out of town all week, so I bought 5 Smart Ones from WW to eat all week. Thats my version of single cooking.

Awesome! :) My husband loves pork chops and sauerkraut. We actually had sauerkraut last night, but on Reuben sandwiches. Yum!
